Vegetables do not have to be boring! Especially when it comes to these maple roasted carrots and beets. Vegetables can be tricky to convince a kiddo to eat. But by adding a natural sweetener such as maple syrup and orange juice, these veggies are as sweet as candy! Maple roasted carrots and beets are also as gorgeous as they sound. If you have any left over beets from this dish, try turning them into beet hummus!

INGREDIENTS :

  • 7 – 10 carrots, peeled and halved lengthwise
  • 4 beets, quartered
  • 3 T maple syrup
  • 1 T extra virgin olive oil
  • 1 T orange zest
  • 4 T orange juice, freshly squeezed
  • 2 cloves garlic, microplaned
  • salt & pepper, to taste
  • parsley, for garnish
  • pomegranate seeds, for garnish
  • goat cheese, for garnish
  • slivered almonds, for garnish

Heat the oven to 375 degrees, and line a baking sheet with foil or parchment paper. To make the dressing, whisk together maple syrup, olive oil, garlic, orange zest, orange juice, salt, and pepper. Set aside.

In a large bowl, combine carrots, beets, and half of the dressing. Mix until all of the ingredients are combined, and then pour onto the lined baking sheet.

Roast the veggies in the oven for around thirty to forty minutes, making sure to stir half way through. Once roasted place onto preferred plate and garnish with goat cheese, pomegranate seeds, parsley, and almonds. Buon Appetito!
