To make the watermelon juice, combine all of the ingredients in a blender and blend until the solids are completely juiced. Send liquids through a tea strainer and set aside.
To make the simple syrup, combine equal parts of sugar and water in a saucepan over medium heat. Stir until sugar is dissolved and let cool.
In a cocktail shaker, combine gin, fresh lime juice, simple syrup, and watermelon juice with ice. Shake until chilled. Fill the final glass with ice. Double strain the cocktail into the final glass, and top with soda water. Garnish with a watermelon slice or cucumber ribbon.
