To make the watermelon juice, combine all of the ingredients in a blender and blend until the solids are completely juiced. Send liquids through a tea strainer and set aside.
To make the simple syrup, combine equal parts of sugar and water in a saucepan over medium heat. Stir until sugar is dissolved and let cool.
In a cocktail shaker, combine gin, fresh lime juice, simple syrup, and watermelon juice with ice. Shake until chilled. Fill the final glass with ice. Double strain the cocktail into the final glass, and top with soda water. Garnish with a watermelon slice or cucumber ribbon.

Our favorite soda water brand, BY FAR, is Spindrift. It’s made with real fruit juice and no funny business. Just look at the difference in ingredients and you will see for yourself. Use the lime flavored one in this cocktail and you got yourself a fantastic pair.
We think that the refreshing and earthy taste of the watermelon cucumber spritz would go really well with the zesty flavors of lemon greek rice. Savor each sip and bite as this exquisite pairing transports you to a mediterranean paradise, tantalizing your taste buds with every refreshing and tangy sensation. Indulge in the ultimate combination of flavors, where the spritz refreshes and the rice dazzles, bringing a touch of summer bliss to your palate.
