And can be used as a spread on a sandwich, a dip for your veggie board, or even a dollop in your next protein bowl. Beets not only add a sexy color, but even more nutritional value to this dish. Trust us, once you start making this beet hummus at home, you will never go back to store bought!
INGREDIENTS :
In a food processor add juice of one lemon and the cooked beets. Pulse until ingredients are blended. Then add the chickpeas, garlic, tahini, juice of one lemon, olive oil, coriander, and salt. Blend until all ingredients are thoroughly combined and smooth.
Spoon the hummus into a serving bowl, drizzle with additional olive oil, and garnish with microgreens. Serve with pita bread or chips. Buon Appetito!
