A good sandwich on some authentic freshly baked bread is an easy way to our hearts. When we were traveling in Bali, we came across a roasted pumpkin sandwich and it just blew us away at how tasty it was. Every bite was packed with flavor and the accompanying pumpkin mustard just took the whole dish to a whole new level. This roasted pumpkin sandwich is our best attempt at recreating that memorable moment. We hope you enjoy it! Be sure to check out our suggested fall pairing at the bottom!

how to make a roasted pumpkin sandwich

INGREDIENTS :

  • sourdough bread, sliced
  • pumpkin mustard, see recipe
  • peperoncini
  • 1 cooking pumpkin 
  • 1 t cinnamon 
  • 1 T extra virgin olive oil
  • salt & pepper, to taste 
  • 1 red onion, caramelized
  • 1 t agave
  • salt & pepper, to taste 
  • 4 C spinach
  • 6-8 garlic cloves, sliced
  • salt & pepper, to taste

  • 2 T of whole grain mustard 
  • 2 T pumpkin puree 
  • 1 T mayonnaise 
  • 2 cloves garlic, microplaned 
  • salt & pepper, to taste

METHOD

To make the pumpkin mustard, place all ingredients into a bowl. Thoroughly combine until everything is mixed. Set aside or place in the fridge to cool.

Preheat the oven to 400 degrees. While the oven is preheating, use a knife or peeler to remove the skin from the pumpkin. Cut the pumpkin into 1 in cubes. Season pumpkin in a bowl with olive oil, cinnamon, salt & pepper. Arrange pumpkin cubes on a baking sheet and roast for 30 minutes. 

To caramelize the red onions, coat a large pan with olive oil on medium heat. Julienne the red onion. Saute onion in pan with agave, salt, and pepper to taste. Quick caramelize onions for a minimum of 20 min with occasional stirring. 

To make sauteed spinach, coat a large pan with olive oil on medium heat. Saute garlic until translucent. Lightly season with salt and pepper. Next add the spinach, and stir frequently until the leaves are fully wilted. Remove from heat and set aside. 

Assemble sandwich on toasted bread. Coat both slices with pumpkin mustard. Add sauteed spinach, roasted pumpkin, caramelized onions, and pepperoncini. Buon Appetito!

When heading out to find your cooking pumpkin, please keep in mind these are not your traditional carving pumpkins. A cooking pumpkin, often referred to as a sugar pumpkin or pie pumpkin, is a type of pumpkin variety specifically cultivated for its culinary uses. Unlike larger carving pumpkins, cooking pumpkins are smaller and have characteristics that make them well-suited for cooking and baking purposes. You can find a cooking pumpkin at most local grocery stores, or you can surprisingly even find it on Amazon, yes, (you can buy a pumpkin on Amazon!) though we wouldn’t recommend buying one online.

One component of this sandwich that really shines is the pumpkin mustard. The most important part of this part of the recipe is the whole grain mustard. You can find endless options of whole-grain mustard on Amazon, so be sure to pick a quality one. Do not use yellow mustard, or anything in that ballpark!

When we found this roasted pumpkin sandwich in Bali, we were traveling in the month of September which was fitting for us since pumpkin is a staple in the month of September. But when we ordered it we were craving other fall flavors such as maple and cinnamon. Insert the maple whiskey sour as a recommended pairing! It was the perfect drink that we wish we had!
