In a large bowl use your hands to thoroughly combine bison, garlic, green onion, white onion, serrano pepper, cumin, paprika, black pepper, salt, and extra virgin olive oil. Form patties to your preferred size. Season each patty with additional salt and pepper. Grill patties to your preferred temperature.
To caramelize the red onions, coat a large pan with olive oil on medium heat. Saute the onion in a pan adding salt and pepper to taste. You can quick caramelize an onion for a minimum of 20 minutes.
Toast the brioche buns on the grill until golden brown. Assemble the burgers with your desired toppings.
