Instead savor this Blueberry Crumble Coffee Cake with your favorite latte, cappuccino, or espresso. The fresh blueberries add such a juicy pop of flavor, with a crumble topping that keeps bringing you back for more. Blueberry Crumble Coffee Cake may just be our new favorite morning treat. Preheat the oven to 350 degrees. Grease a 9 inch square baking pan with coconut oil, and set aside.
In a large bowl add the flour, sugar, baking powder, and salt. Whisk until ingredients are combined. Then add in the butter by smashing it with a fork. In a separate bowl add the milk, eggs, and vanilla extract. Whisk until ingredients are combined. Next combine ingredients of wet and dry bowls together. Lastly, fold in the blueberries. Add the batter to the baking pan and set aside.
To make the crumble, add the melted butter, brown sugar, granulated sugar, cinnamon, and chopped nuts to a bowl. Whisk until ingredients are combined. Pour the crumble mixture over the cake batter and place in the oven. Bake for around 35 minutes.
