how to make blueberry french toast

INGREDIENTS :

  • 5 large eggs 
  • 1 C milk, of choice
  • 1/4 C light brown sugar 
  • 1/2 t vanilla extract 
  • 1 T cinnamon 
  • pinch of salt
  • 1/4 t ground nutmeg 
  • 1/4 t ground ginger 
  • 2 T unsalted butter 
  • bread of choice: brioche, challah, french bread, etc. 
  • honey greek yogurt, for topping 
  • maple syrup, for topping 
  • blueberries, for topping 

METHOD

In a large bowl whisk together eggs, milk, sugar, vanilla extract, cinnamon, salt, ginger, and nutmeg. Slice the bread into one inch pieces. Place the skillet on medium to high heat with butter. While the skillet is heating up, place two slices of bread into a bowl, and let them sit for three minutes on each side. (The longer you let the bread soak, the softer it will become.) 

Rotate two pieces of bread through the wet mixture while the other two slices are cooking on the skillet. Cook until golden brown on each side. Once they are cooked, place on a cooling rack.

Top the french toast with blueberries, greek yogurt, and maple syrup to taste.
