Peanut butter and chocolate are a match made in heaven. The dynamic duo of flavors that create a perfect bite. These peanut butter cups are our healthier version of a Reece’s. Craving something sweet? These peanut butter cups will fill that sweet tooth, as well as, provide nutritional input with rolled oats, chia seeds, and flax seeds. If you are not a fan of peanut butter, swap it our for almond or a preferred nut butter.

INGREDIENTS :

filling :

  • 1 C rolled oats
  • 1/2 C almond flour
  • 1 C peanut or almond butter
  • 1/2 C maple syrup
  • 1/2 t salt
  • 1 T coconut flakes
  • 1 T flax seeds
  • 1 T chia seeds
  • 1/2 T cocoa powder

topping :

  • 1/2 C dark chocolate chips
  • 2 T peanut or almond butter

method

In a large bowl add all filling ingredients. And mix until thoroughly combined. Using a lightly greased muffin tin, fill each cup 3/4 of the way with the filling mixture. Pack it down with the back of a spoon. Then place in the freezer for at least one hour.

To make the topping, combine chocolate chips and nut butter of choice in a microwave safe bowl. Microwave in 30 second increments until the mixture is melted. Stir to combine.

Remove the muffin tin from the freezer and pour the melted chocolate into each cup. Evenly spread the chocolate with the back of a spoon. Place the muffin tin back in the freezer for another hour.

Enjoy frozen or at room temperature. Buon Appetito!
