To make the thyme simple syrup, combine 1 one cup of water and three sprigs of thyme. Bring to a boil, and boil for one minute. Take off the heat and stir in one cup of sugar. Set aside and let cool. Strain out solids with a tea strainer.
In a mixing glass add 2 – 3 plum slices, thyme simple syrup, and fresh lemon juice. Muddle until plums are mostly liquid. Strain liquid into a champagne flute. Top the glass with Prosecco and garnish with a thyme sprig.
