This might be one of our most shared recipes that we have. This is our go-to recipe when we need something that is delicious, easy, and can feed a larger group. Our mom has been known to provide this dish to anyone who needs a night off from cooking. And growing up, we would have this dish on a weekly basis. It was that good! INGREDIENTS :

  • 1 whole chicken 
  • 1 box of rosemary, finely chopped
  • 1 box of sage, finely chopped 
  • 3 lemons, juiced 
  • 1 C extra virgin olive oil
  • ⅓ C white wine 
  • ⅓ C chicken broth 
  • 8 – 10 cloves of garlic, finely chopped 
  • salt & pepper, to taste 
  • veggies of choice: baby carrots, potatoes, brussel sprouts, broccoli, etc

METHOD

To prepare the herb sauce, combine the rosemary, sage, garlic, lemon juice, olive oil, broth, wine, salt, and pepper. Mix until all the ingredients are thoroughly combined.

Prepare vegetables according to preferred style: roughly chopped, whole, etc. Next place the veggies into a large bowl with half of the herb sauce. Mix until all of the veggies are thoroughly coated.

Preheat the oven to 375 degrees. If you don’t have one large roasting pan for the chicken and veggies, then separate them into two medium size pans. This works just as well!

Pour your marinated veggies into the bottom of the pan and spread evenly. Make a well in the middle of the vegetables to place the chicken. Pour or brush the second half of the herb sauce over the chicken. Brush some of the sauce in between the meat of the chicken breast and the skin by slightly pulling the skin away from the breast. 

Cook the chicken and veggies for one hour. Every twenty minutes, mix the vegetables and base the chicken with the juices. Feel free to remove the vegetables from the oven before the chicken if the vegetables start to become overcooked.
