Fun fact, did you know that you can eat kumquats whole, peel and all? We are certainly guilty of popping a few in our mouths while we are in the grocery store! But they are enjoyed much better in a cocktail! The rosemary kumquat whiskey sour is a refreshing and flavorful cocktail that is perfect during kumquat season. The tart kumquats and the sweet whiskey are perfectly balanced, and the rosemary adds a hint of herbal complexity. To make the rosemary kumquat simple syrup, combine one cup of water, 3 – 5 rosemary sprigs, and 3 – 5 halved kumquats. Bring to a boil, and boil for 2 – 3 minutes. Take off the heat and add one cup of sugar. Set aside and let cool. Strain out solids with a tea strainer.
In a cocktail shaker add one egg white and fresh lemon juice. Shake without ice vigorously for ten seconds.
Add the remaining ingredients and ice to the shaker. Shake until chilled. Strain into final glass with ice and enjoy!

Egg white cocktails are certainly not everyone’s cup of tea. Besides the added protein, why put them in there? Egg whites are added to cocktails to create a rich and frothy texture. When shaken vigorously with other ingredients the egg white creates a creamy foam on top, adding a luxurious and velvety mouthfeel to the drink. This technique is commonly used in classic cocktails like Whiskey Sour and Ramos Gin Fizz, enhancing the overall presentation and taste of the beverage. One thing to note is that you will need to use a decent cocktail shaker in order to get that frothy goodness. We typically don’t like the cocktail shakers (the ones with the cap) that you see at the stores everywhere because they tend to leak. We love using Boston shakers, and in particular, we love the brand Cocktail Kingdom. When Evan was mixing up craft cocktails full time, this was the brand that his team used.
