Roasted carrots are a very underrated side dish, in our opinion. And these tahini yogurt carrots do not lack in color or flavor. With carrots best in season during Spring, these are best served with a delicious tahini yogurt sauce that pairs perfectly together. how to make tahini yogurt carrots

INGREDIENTS :

carrots :

  • 1 – 2 bunches of rainbow carrots
  • 2 – 3 T extra virgin olive oil
  • 1 bunch herbs of choice: rosemary, thyme, sage, etc.
  • 1/2 mandarin orange, juiced
  • salt & pepper, to taste
  • sesame seeds, for garnish
  • toasted nuts of choice, for garnish

tahini yogurt sauce :

  • 4 cloves garlic, microplane
  • 1 lemon, zested & juiced
  • 1 t paprika
  • 1 t honey
  • 1 T extra virgin olive oil
  • 1 – 2 T water
  • 1/4 C tahini
  • 1 C cashew yogurt
  • 1 T sesame seeds
  • salt & pepper, to taste

method

Preheat the oven to 425 degrees. Evenly line a roasting pan with a variety of herbs, and set aside. Peel or wash the carrots.

In a large bowl add the carrots, olive oil, mandarin juice, salt, and pepper. Toss until ingredients are combined. Place the carrots on top of the herbs, then cover the roasting pan with foil. Place in the oven and roast for around 45 minutes.

While the carrots are roasting, add all of the tahini yogurt ingredients to a bowl. Whisk until combined, and set aside. (Depending on how thick or thin you prefer the sauce, add or limit the amount of water.)

Plate the roasted carrots on a preferred plate or platter, removing the herbs. Then garnish with sesame seeds and preferred nuts. Buon Appetito!

We love to enjoy these carrots family style. And with that being said, the larger the platter the better! When serving this dish we actually prefer to spread the tahini yogurt sauce on the platter before adding the carrots. That way every bite consists of all the flavors and textures!
