Yogurt chicken is one of those dishes that can be cooked and eaten on a weekly basis. Yogurt not only keeps the chicken moist, but is rich in important nutrients and high in protein. This dish was inspired by one of our favorite local Marin restaurants, Insalata’s. If you ever have the opportunity to visit, do not pass up the “yogurt marinated grilled chicken”. We took inspiration from this dish and turned it into bite size chicken wings.

INGREDIENTS :

  • 2 lbs of chicken wings 
  • 2 C greek yogurt 
  • 2 lemons, juiced and zested 
  • ½ C extra virgin olive oil
  • 3 – 4 garlic cloves, microplaned
  • 2 T honey
  • 3 T water  
  • 2 t cumin 
  • 1 t red chili flakes 
  • 2 t salt 
  • 2 t pepper 
  • 6 large mint leaves, finely chopped

In a bowl, whisk together all ingredients except for mint for yogurt sauce. Add additional seasoning per desired taste. Pour 3/4 cup of yogurt sauce into a bowl and set aside the rest of sauce for drenching the chicken wings after cooking.   

Preheat the oven to 350 degrees. Set up a sheet tray with a wire rack and set aside. Toss the chicken wings in the yogurt sauce. Place a cast iron or deep saute pan on medium high heat and coat the bottom of the pan with olive oil. Cook the wings until golden brown. Remove from the pan. Sprinkle lightly with salt. Place the wings in the oven and cook for 25 minutes. 

Add mint to the rest of the yogurt sauce. Once the wings are cool, toss in the remaining sauce. Top with crushed red chili flakes. Buon Appetito!

Why not add lemon zest to this dish. Did you know that the entire lemon is edible, including its rind? It’s zest, the colorful waxy outer portion of the rind, is deeply aromatic and rich in essential oils. It can be removed by grating or zesting, and adding as a flavoring to vegetables, desserts, or even meat dishes!
