Who doesn’t love a good potato recipe?! But sometimes the amount of oil and salt can make these dishes unhealthy. That’s why we decided to use the air fryer. These air fried potato balls are perfectly crispy on the outside and soft on the inside. Did we mention that they are bite size too?! We prefer these air fried potato balls with a squeeze of lemon juice and fresh parsley. Enjoying these as an appetizer? Sip on a rosemary kumquat whiskey sour while doing so!

INGREDIENTS :

  • 3 large russet potatoes, peeled and cut into quarters
  • 4 T cornstarch
  • 3 T parmesan cheese, grated
  • 3 T fresh parsley, finely chopped
  • salt & pepper, to taste
  • lemon wedges, for garnish
  • preferred dipping sauce

Place the peeled and cut potatoes into a large pot. Add cold water until the potatoes are covered by one inch. Then add a pinch of salt, turn the heat to high, and bring the water to a boil.

Once the water reaches a boil, reduce the heat to low to maintain a simmer. Then cook covered for fifteen to twenty minutes.

Remove the potatoes from the pot and begin mashing. Mash until the potatoes are smooth.

In a large bowl add the mashed potatoes, cornstarch, parmesan cheese, salt, and pepper. Mix until all ingredients are combined. Using your hands, shape the mixture into golf-size balls.

Set the air fryer to 425 degrees and place the potato balls on a foiled rack. Cook in the air fryer for fourteen to sixteen minutes.

Once the potatoes are cooked, place onto desired serving plate. Garnish with parsley, parmesan, and lemon wedges. Buon Appetito!
