Grilled veggie skewers and chimichurri sauce are a match made in culinary heaven. The charred and tender vegetables on the skewers create a beautiful canvas for the bold and vibrant flavors of the chimichurri sauce. This traditional Argentinian sauce, typically made with fresh herbs, garlic, vinegar, and olive oil, adds a burst of tanginess that complements the smoky grilled veggies. Together, they create a harmony of flavors that will impress even the most discerning palates.

Prepare the skewers by alternating between zucchini, mushroom, bell pepper, red onion, pineapple, and a piece of bread. Brush the skewers with olive oil, salt, and pepper. Then heat the grill to medium-high heat.
To make the chimichurri sauce, add all of the ingredients into a large bowl. Mix until thoroughly combined.
Once the grill is hot, cook the skewers for around 5 – 8 minutes on each side. Remove from the heat and drizzle chopped chimichurri over each skewer.
This recipe makes approximately 8 skewers and serves well over wild rice or farro.

If you don’t have skewers, no problem! Use the veggies that you already have and cut them into preferred pieces.
