This peach mojito is a delightful twist on the classic cocktail, infusing it with the natural sweetness and juiciness of peaches. To make the mint simple syrup, combine one cup of water and 6 – 10 mint leaves. Bring to a boil, and boil for one minute. Take off the heat and add one cup of sugar. Set aside and let cool. Strain out solids with a tea strainer.
In a Collins glass, add 2 – 3 peach slices and muddle. Slap mint in hands. Add mint and gently muddle, making sure to not break the mint leaves.
Add rum, lime juice, and simple syrup to the Collins glass. Carefully add ice and top with soda water. Gently stir until all ingredients are mixed. Garnish with a mint sprig and a peach slice.
