INGREDIENTS :

cupcake :

  • 1 ½ C cake flour 
  • 1 ½ C all-purpose flour 
  • 1 C granulated sugar 
  • 1 ½ t baking powder 
  • 1 ½ t baking soda 
  • 3 small limes, zested 
  • 3 small limes, juiced 
  • ¾ C unsalted butter, softened 
  • 1 ½ C pineapple puree 
  • 2 T tequila, blanco
  • 3 large eggs 
  • ¾ t salt

frosting :

  • ½ C cream cheese, room temp 
  • 1 C unsalted butter, room temp 
  • 3 ½ C powdered sugar 
  • 2 T tequila, blanco
  • 1 ½ T lime juice 
  • ¼ t salt

METHOD

To make pineapple margarita cupcakes, start by preheating the oven to 350 degrees and lining a cupcake pan with paper. In a large bowl combine cake flour, all-purpose flour, sugar, baking soda, baking powder, lime zest, and salt. Mix until all ingredients are thoroughly combined. 

Add softened butter to the bowl and beat with a hand-held mixer for around one minute. Stir in the egg, one at a time, and continue to beat with a mixer. Next, add pineapple puree, lime juice, and tequila. We used one of our favorite blanco tequila, Suerte. Mix on medium speed for two minutes. 

Place cupcake batter into the pan and bake for 18 – 20 minutes. Remove cupcakes from the oven, and let rest for an additional five minutes. Let the cupcakes completely cool before frosting. 

To make the frosting, combine butter and cream cheese in a large bowl with a mixer until smooth. Next, add the powdered sugar, one cup at a time until all of the sugar is mixed in. Add lime juice, salt, and tequila, and beat the frosting for 3 – 4 minutes on medium speed. 

Once the cupcakes are cooled, pipe the frosting with a pattern of choice. Finally, garnish with a pineapple slice or additional lime zest.
