how to make pumpkin pasta


  • 1 box of pasta, preferred type
  • 1 can pumpkin puree 
  • 1 C creamer 
  • 3 T tomato paste 
  • 4 cloves of garlic, microplaned 
  • 1 shallot, finely diced 
  • ¼ C walnuts, raw & chopped 
  • 1 bundle of sage leaves 
  • ½  t smoked paprika 
  • ½  t red chili flakes 
  • 3 T butter, unsalted
  • salt & pepper, to taste 
  • extra virgin olive oil

Heat a large pan over medium heat. Add enough olive oil to coat the bottom of the pan. Saute garlic and shallot until golden brown. Season with salt and pepper. Next add the pumpkin puree, tomato paste, paprika, red chili flakes, and additional salt and pepper. Stir until all ingredients are combined. Turn the heat on low and cook for around five minutes. Slowly add in the creamer and two tablespoons of butter. Mix until all ingredients are combined. Add 2 – 3 ladles of pasta water if desired a thinner consistency. 

Heat a small pan over medium heat, adding one tablespoon of butter. Next add the walnuts, sage, salt and pepper. Stir frequently until the walnuts are golden brown and the sage is crispy. Add to a small bowl and set aside. 

Cook the pasta in salted water according to the instructions on the package. Once the pasta is cooked add it to the pumpkin sauce pan. Stir until the pasta and sauce are combined. Garnish with fried sage and walnuts.
